These bliss balls are a great afternoon energy boost and super simple to make, a great processed sugar free and fiber rich snack.
¾ cup of oats
1 cup of shredded or desiccated coconut
¾ cup of dried apricots
1 cup of pitted medjool dates
1 tbsp. coconut oil
1 tsp. vanilla bean paste
¼ tsp. of Himalayan pink salt
¼ cup of extra coconut and about 15 goji berries for decoration
Place oats and coconut in a blender or high-speed blender and process until a flour.
Add in all other ingredients except the extra coconut and goji berries and process on medium speed until the mix is well combined and the apricots and dates are broken down.
If you’re using a blender you may need to do the mix in two portions.
Place the extra
Next wash your hands, and using slightly damp hand roll tablespoon sized portions of the mixture into balls.
Dot with a goji berry on the top and roll in coconut.
You can store these treats in the fridge or the pantry, depending on how soft you like them.
